Recipe: FizzUp-Style Zucchini Soup

To bring out all your soup’s flavors, you’ll need:

  • 6 zucchinis
  • 1 onion
  • 1 to 2 garlic cloves
  • 1 tablespoon olive oil
  • 5 wedges of plain Laughing Cow cheese
  • 2 tablespoons chopped mixed herbs
  • Salt & pepper

Makes 4 servings  

Step 1: Cook the zucchinis

Cop the onion before sautéing it in a deep sauce pan with the olive oil. Slice the zucchinis into medallions and put them in the sauce pan. You can keep the skin on. Cook the ingredients and add the garlic, salt and pepper to taste. This step will bring out all the flavors of the vegetables as they cook.

Step 2: Simmer

Add water to the sauce pan but don’t cover the zucchinis completely. This will make your soup thicker. Feel free to dump out some of the water once the zucchinis are done cooking and before you blend them if the mixture looks too runny.

Want even more flavor? You can add vegetable broth, thyme and bay leaves to the zucchinis while they’re cooking in the water. This will give your soup more flavor and character.

Step 3: Blend

When the zucchinis look cooked, add the cheese wedges into the mixture when it’s still hot. Pour the mixture into a blender and blend it well. Lastly, put some parsley on your soup as a garnish or blend it with the rest of the soup. And it’s ready! Enjoy!
