It’s better to use seasonal fruit. Go for a variety of colored fruit. They make our fruit spring rolls even more tempting.
Heat the milk in a saucepan. When the milk boils, pour in the oats and cook for 2 to 3 minutes over medium heat. The oats should absorb the liquid and swell in the saucepan. Once the oats are cooked, remove them from the heat. Add a tablespoon of honey. Cover and let it stand for 5 minutes. Mix and let it cool.
Peel the apples and kiwis. Cut all the fruit into thin strips. Blend half of the cut apples with the mint leaves and a tablespoon of honey. Add the mixture to the oats and keep it cool.
One by one, soften the rice paper sheets in a bowl of cold water. Place each one flat on a cloth. Garnish with apple, kiwi and strawberry pieces. Add two tablespoons of the oat mixture. Fold the two edges inward and roll the sheet to form a roll. Repeat for the other rolls. All you have to do now is savor your fruit spring rolls! Enjoy!
